Fabulous Food Friday #124

{I’m going to do something totally random that I’ve never done before and dedicate this recipe to all of the sweet ladies from my dad’s work who read my blog!  It makes my dad (and me) so happy that you are such avid readers and friends!}  

This was one of those random creations that turned out even better than I expected!
There is only one thing I would change about this recipe.
Make a double batch next time!

Chocolate Caramel Pretzel Cookies



Makes 16

1 Devil’s Food Cake Mix

1 stick of butter, melted and cooled

2 eggs
1 tsp vanilla extract
1 cup chocolate chips (semi-sweet or milk)
1 1/2 cups crushed pretzels sticks
1 1/2 cups Kraft Caramel Bits

Preheat oven to 350°.  In a stand mixer, mix together cake mix and melted butter.  In a small bowl lightly beat together eggs and vanilla.  Toss in chocolate chips, crushed pretzel sticks and caramel bits and mix until well combined.  Using a 1 oz scoop (equals 2 TBSP) scoop out cookie dough and place on a cookie sheet.  12 per cookie sheet.   Bake for 10 minutes.  Let cool for 5 minutes then cool completely on a wire rack…if they can last that long!

*A fun and simple addition would be when you’ve got the cookie dough balls on the sheet, sprinkle lightly with kosher or sea salt before baking.
