Keen-what?

Last year I switched from using white rice to brown rice.  
Just something little to be a little healthier.  
Baby steps right?  
Well, I guess that quinoa is the new brown rice and 
I'm behind on the health trend. 

I first heard about it last year, 
but only thought that vegans and uber healthy people ate it because the thought of eating rice was abominable!  
Gotta love those starches.  

More and more people are eating it these days because 
it's becoming more readily available.  
Now, I'm not trying quinoa because it's the trendy thing to do, 
but a healthy choice to make.  
Food and eating is all about choices...
whether they are wrong or right, that is up to you.  
Am I ever going to give up a heaping pile of 
creamy mashed potatoes and gravy?  Probably not.  
I am, however not going to make it a 
heaping pile every time I eat it.  


Off track (as usual).  
The reason I'm posting is I'm calling out to you healthy people and even those who are trying to make more healthy choices.  
What recipes have your tried using quinoa?  
Link me up to those recipes or pins that you've tried or 
are planning on trying.  
I mean...this bag was not cheap so 
I want to get the most out of it!

  1. First thing, remember to rinse it first, otherwise, ick. I roast a big pan of veggies in olive oil--onions, peppers, and especially butternut squash. Then put that over cooked quinoa. Needs salt and more olive oil, especially really good olive oil. Even better if you put toasted pine nuts or pistachios on top. It's my favorite lunch. I'll bring you some next time I make it. Amber has some great quinoa recipes, too.

  2. My husband and I love quinoa! We eat it sometimes as a side dish (instead of rice or potatoes with chicken and veggies, for instance) or as a total meal. Because quinoa is high in protein, when we want to do a meat-free meal, it's a good choice.     If you have any couscous recipes that you really like, you can sub-in quinoa for couscous to transition yourself. We love to mix quinoa with chopped basil, tomatoes, mozzerella and a little olive oil, balsamic vinegar, salt and pepper. A great quinoa caprese 'salad' recipe for lunches or a light addition to a meal!

  3. I mix red quinoa in our taco meat to stretch it - and I freeze half of it for later.

  4. I don't use a recipe, but I make it the same way every time. As Kristy said, remember to rinse it in a mesh strainer. Then cook it 2/1 ratio liquid to quinoa. I use chicken broth or vegetable broth, and I add a bunch of garlic salt. When it's about half way cooked, I add several cups of thawed frozen veggies - corn, peas, carrots. Chop of some red peppers to throw in, throw in some sliced green onions just before it's done cooking. This is usually a meal in itself for me, or I'll eat a salad with it too. Super yummy, super easy. I always have some in my fridge - it lasts about 6 days at the most.

  9. Quinoa Salad
    Ingredients:
    - 2 cups Quinoa, follow the directions on the package to cook and let it cool

    - 1/4 cup currants
    - 1/4 cup almonds, chopped

    - 1/2 cup carrots, diced
    - 1/4 cup mint, chopped
    - 1/4 cup scallions, sliced
    - 1/4 cup parsley

    - 1 tsp honey
    - 1/4 cup lime
    - 1/2 tsp cumin
    - 1/2 tsp salt
    - 1/2 cup extra virgin olive oil

    Directions:

    After quiona is cool, mix everything together and serve.
