I'm saying good-bye to my Fabulous Food Fridays. I've been doing it a little over 5 years and it's been great! Like, really good for me. Posting a delicious recipe on Fridays was always something I looked forward to.
To be honest, though, it is starting to stifle me a little bit. There are so many recipes and pictures tucked away in my notebook and computer that I can't just post one little recipe one day a week! If I want to post a recipe on a Tuesday, why can't I? No, I'm not going to become strictly a food blog. I definitely don't have that many recipes! But I want that little freedom back so I can grow and expand here.
I'm really looking forward to the future of my little site and I hope you are too! So, here's one last Fabulous Food Friday recipe. My mouth still hurts because I ate so many of these little golden rings of goodness! Every time I make them, my husband proclaims it was the best batch yet!
Crispy Onion Rings
3 medium white or yellow onions
1 large egg
2 cups milk
1 1/2 cup all purpose flour
3 TBSP cornstarch
1 tsp dried oregano
1 tsp chili powder
1 tsp garlic powder
1 tsp salt
1/2 tsp cracked pepper
In a medium bowl, whisk together egg and milk. Remove outer dry skin from the onions and cut off each of the ends. Thinly slice into rings, about 1/4" thick. Separate rings and place in milk mixture. Cover with plastic and place in the fridge for 1 hour.
In a medium/large pot, place about 3 inches of oil and bring it to a medium high heat. Test the temperature by sprinkling a little of the flour mixture into the oil. If it starts to sizzle immediately, it's ready, about 3 minutes.
In another medium bowl, whisk together flour, cornstarch, oregano, chili powder, garlic powder, salt and pepper. Using tongs or your fingers, remove about a dozen rings from the milk mixture and shake off any excess liquid. Place in flour mixture and toss to coat. Shake off any excess flour and gently place in the hot oil one ring at a time. Let it cook for about 1-2 minutes on side and flip over using tongs. Cook for another minute or until lightly golden brown. Remove and place on a baking sheet lined with paper towels or brown paper bag. Lightly sprinkle with salt. Repeat until all rings are cooked.
