Do you know the muffin man?

I just finished making delicious pumpkin muffins and wanted to share the recipe! I got this recipe when I was on my mission in BC Canada. We used to go over to a lady’s house named Gayle, and she grew pumpkins every year. Hers were made with actual fresh pumpkin puree, but they are just as good with the canned. Even though there is a ton of sugar in them, they are not too sweet. Well, if you don’t add the yummy crumbly topping that I just added to them this year, then they are not too sweet.

Pumpkin Muffins

4 eggs
2 cups sugar
1 1/2 cups oil
1 3/4 cups pumpkin or 1 small can
3 cups flour
1 TBSP cinnamon
1 tsp. nutmeg
2 tsp baking soda
1 tsp salt
2 cups raisins
Beat eggs slightly. Add sugar, pumpkin and oil and beat thoroughly. Add dry ingredients and mix until smooth. Stir in raisins. Line muffin tin with paper cups or grease muffin tin. Fill 2/3 up. Sprinkle with crumble topping and bake at 375 for 15-20 minutes.

Crumble Topping

4 TBSP Butter
8 TBSP Flour
8 TBSP Sugar (or brown sugar works, too)
2 tsp cinnamon
Mix together in a bowl, until it looks like peas.
