Fabulous Food Friday #58

I have tried many biscuit recipes and I always come back to this one I found years ago from a Paula Deen cooking episode. She cuts hers into stick so you can dip them in jam, but I cut mine into rounds. I always double the recipe to I can make them a little “taller” and thicker. So easy and quick!

Homemade Biscuits
1 3/4 cups sifted all-purpose flour, plus more for dusting rolling surface
1/2 tsp salt
3 semi-heaping tsp baking powder
4-6 TBSP chilled butter, cubed
3/4 cup milk or half and half
melted salted butter, for brushing biscuits

Preheat oven to 450º. In a large bowl, sift together the flour, salt, and baking powder. Add 4 to 6 tablespoons chilled butter. Cut butter into dry ingredients and then make a well in the center and add 3/4 cup milk or half and half all at once. Stir until dough is free from the sides and then turn onto a lightly floured surface. Knead gently and quickly, folding only 8 to 10 times. Roll with a lightly floured rolling pin, until the dough is about 3/4-inch thick. Using a round biscuit or cookie cutter, cut out and place on a lightly greased cookie sheet (I use my deep dish round stone). Repeat until all the dough is cut. Brush with melted butter. Bake 5-8 minutes or until just lightly golden.

I regret not taking a picture of this fabulous dessert when I made it a few weeks ago. We all kept eating it so quickly that I didn’t have a chance. Original recipe (and picture) can be found here.

Oreo Delight
35 Oreo cookies (1 whole pkg.)
6 TBSP butter, melted
1 pkg. cream cheese, softened
1/4 cup sugar
2 TBSP milk
1 (12 oz.) tub Cool Whip, thawed
3 1/4 cups cold milk
2 small pkg instant chocolate Jell-O pudding
optional: more crushed Oreos or chocolate chips to sprinkle on top
Mix crushed cookies and butter in medium bowl. Press firmly onto bottom of 9 x 13″baking dish. Refrigerate for 10 minutes. Beat cream cheese, sugar, and 2 TBSP milk in medium bowl with wire whisk until blended. Stir in 1 1/4 cups Cook Whip. Spread over crust. Pour 3 1/4 cups milk into bowl. Add both pudding mixes. Beat with wire whisk for 2 minutes. Pour over cream cheese layer. Let stand 5 minutes. Drop remaining Cool Whip over pudding and spread. Sprinkle more crushed Oreos or chocolate chips on top. Refrigerate at least 4 hours.
