Fabulous Food Friday #9

A few weeks ago I tried this recipe from the Pioneer Woman. The night before, I had heard of a fantastic deal on steak at Target. I picked up 9 eye of round steaks for only 2 dollars, saving myself 12 dollars. One of the packages was going to expire in two days so I decided to try out the recipe. I think what I loved about it most is that it took merely minutes to do and was so scrumptious. I didn’t go to the extremes that she did to add the extra butter at the end and it was still great. Serve with a vegetable salad and you have yourself a meal! Click picture to enlarge.

Finally, here is the brownie recipe I promised. I am a gooey brownie girl. The kind you almost have to eat with a fork because it falls apart when you pick it up. The kind that is barely any different than the batter it started off as. I know everyone is not like me and some prefer a more cake like substance. In my oppinion, if you want a more cake like brownie you should just eat cake! To each there own. This recipe is the PERFECT combo of both. Like most of my recipes, I have had them forever, but never have made them. I like to consider myself a collector of recipes. One of my favorite things to do is actually read recipe books. Kooky, I know. This recipe has a major story behind it. I have only made them once, years ago, and it was only out of spite for my husband that I did so.

Ian knew a girl (who shall remain nameless) who he was super nice too. That is just the way Ian is. Nice to most everyone. She took it the wrong way and thought he wanted to marry her. (I sure hope she doesn’t read my blog!) Of course the story doesn’t end pretty, major hurt feelings, rumors spread, and a box of and memorbilia mailed to Ian once she found out that we were dating. Some shredded, broken glass, ash from items being lit on fire. The usuall closure box. but the past is behind us now and over the past years things have gotten better with her (so I hear).
Anyways, when Ian and I were first married, I am talking like weeks of being married, he said that he had been craving her brownies. Not what any newly married woman wants to hear. He called up his mom and got the recipe and kindly handed me the recipe thinking nothing was wrong with what he had done. I remember going off on him telling him there was no way I was going to make these. He sweet talked me enough to where I gave in. I think I might have spit on his. To my demise they were actually some of the best brownies I had ever tasted. I teased him that I felt betrayed that he, first, when to his mom for a recipe and, second, that it was a recipe of a past girl. I laughed about it later that I had thrown a fit over something so trivial, yet I didn’t ever make them after that. Till this week. I can’t ever make a boxed brownie again. Darnit!

Betrayal Brownies {EDITED}
3 sticks butter
3 cups sugar
1 TBSP vanilla
5 eggs
2 cups flour
1 tsp baking powder
1 cup cocoa
1 tsp salt
24 peppermint patties (optional)
Preheat oven to 350. Grease 9×13 pan. In large bowl, cream together butter, sugar and vanilla. Beat eggs. Add in and mix well. Mix in flour, cocoa, baking powder and salt. Reserve two cups of batter and set aside. Spread remaining batter in prepared pan. Arrange patties in a single layer over batter. Spread reserved batter over patties and cover evenly. Bake for 50-55 minutes or until center comes out clean.

**I only added 2 1/2 cups of sugar and they were just fine. I felt too guilty to add 3 cups. I also did not make them with the peppermint patties because we were going to dip them in a
caramal/chocolate fondue. I am sure you could do the same with Andie’s Mints.

So I have gotten a few requests by comments and emails for the cream cheese and peanut butter frosting I smeared the brownies with here. I just made it up so if any one has a real recipe, I would love it! A warning…you don’t want to have a clean spoon on hand because you can eat this by the spoonful…so just use your finger! Obviously you won’t have to die yours green…unless you want to!

Cream Cheese and Peanut Butter Frosting
4 oz. cream cheese softened
3/4 cup peanut butter
1 tsp vanilla
2 1/2 cups powdered sugar
2-4 TBSP milk
Cream together cream cheese, peanut butter and vanilla. Add in powdered sugar and mix until smooth. Add in milk a little at a time until you get the desired consistancy.

**I like mine slightly on the runny side so it spreads easier and doesn’t tear up the dessert. Once I am done frosting I just chill it for a bit to help set up. I also did it by hand because my mixer is broken and it turned out great.
