Homemade Butter Beer

The last of the last Harry Potter movies came out on DVD over the weekend. Friday, in fact. I was going to post this super fun drink then (in honor of some of my favorite books ever) but this pregnancy is still kickin’ my behind! So, today’s not too late to share, right? This is the perfect treat to drink while watching good ol’ Harry and the gang!

Butterbeer | My Name Is Snickerdoodle

Serves 4

4 TBSP caramel topping (I used Mrs. Richardson’s) or Homemade Butterscotch Sauce
4 bottles IBC Cream Soda

Whipped Topping
1 cup whipping cream
2 TBSP caramel topping
1/2 tsp vanilla extract
2 TBSP sugar

Place 1 TBSP caramel topping each into 4 large mugs (preferable chilled). Pour about 1-2 TBSP of cream soda into each mug. With a spoon, stir up caramel and soda until caramel has broken down and “watery”. Pour remaining soda into each mug, almost to the top.
Whip together whipping cream, caramel, vanilla extract and sugar until medium stiff peaks form (about 2 minutes). Top each mug with whipped topping. Serve.

*Don’t add all the soda at once then try to stir in the caramel. You will stir out all of the carbonation and your drink will be flat.
