Grilled Garlic Parmesan Chicken

Summer time is the time for grilling.  I’m not sure why because it’s always so blazing hot outside then you are standing over a blazing hot fire!  I would rather do that, though, than heat up my house!  I guess I shouldn’t complain because I love the taste of anything grilled!

We don’t own a fancy grill, just a small square-ish one I got on sale a few years ago from Lowes.  We’ve been experimenting with different marinades and sauces for our chicken and one of our favorites is the Garlic Parmesan.  YUM, right?!  I simply just use my sauce that I use for our boneless wings that can be found HERE (with a pretty old picture).

All you need to do is make the sauce ahead of time and set it aside.  Grill four chicken breasts over medium high heat for about 6 minutes on each side or until cooked through.  Lay the skin side down first.  I know.  Most of us use boneless skinless breasts.  Cook the side that used to have the skin on it.  The trick is once you’ve laid it on the grill, don’t move it until it needs to be flipped.  Chicken tends to like to stick to the grill and you’ll end up shredding it.

Once your chicken is about done on the second side, baste the cooked side with the sauce.  I use a silicone brush, but you can also use the back of a spoon.  Finish cooking it on the second side and flip it over to cook for about 1 more minute on the sauced side.  This just seals in those flavors.

Quickly baste the underside of the chicken with sauce then give it one more flip, baste the top side again and remove to a platter.  This chicken has become our summer favorite.  It’s really good with a baked potato and simple salad.  Enjoy!
