A little on the tacky side…

Last night Ian had his work party for Hightlight Sports (photography) and we had the best time. We went to Olive Garden and good thing they sat us in one of the back rooms because even though there were only 7 of us, we were SO loud. We laughed most of the night and ate delicious food with great company. It’s always so great to get along with the people you work with.

When he got home from work earlier that evening he had brought home some gifts that he got from his co workers at his 8-5 job. One person gave a bag of Betty Crocker sugar cookie dry mix with a cute note and trinket attached. WARNING!!! What I am about to tell you is probably the most tacky thing I have done in a long time…so beware and don’t think less of me…because you would have done the same thing! A few minutes later Ian reminded me that he needed to bring the dessert that he had signed up for their Christmas luncheon the next day. I knew all about it and had high hopes of making a scrumptious Paula Deen “Not Yo’ Mama’s Banana Pudding“, but completely forgot to buy the stuff for it. We had to leave in an hour for his other work party so I was in a pickle. I grabbed the bag of sugar cookie mix and marched myself to the kitchen. I knew that it was completely tacky to just bake them as is so I made it a little better and found some things to add to them. So here is my “on the fly” recipe…

“Tacky Sugar Cookies”
1 bag Betty Crocker Sugar Cookie dry mix
***The butter and egg are what is called for on the back of the bag so do not add extra***
1 stick of soften butter
1 egg
zest of 1 orange
1 tsp orange extract
1/2 tsp almond extract
1/2 cup sliced almonds

Form into 1″ balls and then roll in sugar. Bake as directed on bag.

The only reason I rolled them in sugar is because I didn’t have any powdered sugar to make a glaze. If I had, I would have used about 2 TBSP of orange juice to 1-1 1/2 cups of powdered sugar. Then drizzle over the top.

I have to say they turned out so delicious and took not even 15 minutes from start to finish to make. So by adding the extra stuff, it turn them from a totally tacky dessert to a somewhat tacky dessert!

This Friday, I am traveling with Ian to take wedding pictures. We are staying overnight so Liam will also be the photographers assistant. His two top teeth are starting to break through so lets cross our fingers that he will be a trooper!

    Are you secretly “Sandra Lee” from Food network?? Very clever & QUICK! Hope Liam’s teeth don’t bother him too much…cold baby carrots or celery sticks help relieve the pain if he chews on them…
