Muffin Madness Orange Poppy style

These could be eaten for dessert!!!

Orange Poppy Muffins
1/3 cup flour
1 cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 egg
1/2 cup sour cream
1/3 cup melted butter
2 TBSP orange juice
1 TBSP grated orange peel

Mix together flour, sugar, soda and salt. IN another bowl, beat egg and mix together with sour cream, butter, orange juice and peel. Stir in dry ingredients just until moistened. Fill muffin tin 2/3 full. Bake at 400 for 18-20 minutes, until center comes out clean. Cool in pan for 5 minutes before removing.

Orange Spread (I would call it frosting, but then you really couldn’t justify eating these for breakfast!)
1/2 cup butter softened
3 oz. cream cheese
1/4 cup powdered sugar
1 TBSP grated orange peel.
Whip together and spread over muffins.

    I’m never gonna get rid of this baby weight now! I just look at the recipe and automatically gain 10 pounds:o) I think I’ll be making those tomorrow! And yes…we had our baby!!! WOO HOO!!!
