The last muffin recipe got me thinking about other recipes that I got from my mission and I have been craving this one lately. And caramel popcorn always reminds me of the fall. This came from the Penny family in my second area, Prince George. I begged her to make it every time we came over. That was before I knew I really shouldn’t eat popcorn so I am sure it wasn’t helping my problem. Now I know that if I make it, I make it for someone else and just have a few bites before it leaves my home.
Sticky Caramel Popcorn
1/2 cup brown sugar
1/4 cup maple syrup
1 stick butter (do not use margarine)
1/2 tsp cream of tartar
1/2 tsp baking soda
1 large bowl of pop corn (about 10 cups)
In a saucepan, melt together butter, sugar, syrup and tartar over medium high heat. Bring to soft ball stage (pouring a couple of drops in cold water and form a ball with your fingers). About 2-3 minutes. Take off heat and mix in soda. Mixture will foam. Pour over popcorn and stir until evenly coated. Let cool in bowl before eating.
