Sweet and Spicy Pulled Pork

Incredible recipe for a subtle sweet and spicy pulled pork. Perfect for burritos, quesadillas, sliders or in a salad!

Ingredients

  • 5-6 lb Pork Roast

SEASONING RUB

  • 1 1/2 tsp Kosher Salt
  • 2 tsp Freshly Cracked Pepper
  • 2 tsp Cumin
  • 1 TBSP Chili Powder
  • 3 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 cup Brown Sugar

SAUCE

  • 12 oz Dr. Pepper 1 Can
  • 10 oz Red Enchilada Sauce Mild, Medium, Or Hot
  • 1 Whole Jalapeno Pepper Cut in half. You can remove the seeds for less heat
  • 1 Medium Yellow Onion Peel, root removed and sliced

Instructions

  • In a small bowl mix rub ingredients together.
  • Place pork roast in the crock pot.
  • Sprinkle the spice mixture over the roast and rub in to completely coat.
  • Add in sliced onion and jalapeno pepper on the sides of the roast.
  • Pour in enchilada sauce and Dr. Pepper around the roast. Don't worry about it not being mixed. That will happen while it's cooking.
  • Place the lid on your slow cooker and cook on high for 3 hours.
  • Reduce the heat to low and cook for 5 hours.
  • Shred the pork and remove any large fatty pieces.
  • Serve!

Notes

*This can be cooked on low for 12 hours or overnight.
