Chicken Taquitos

Chicken Taquitos are the perfect go to weeknight dinner recipe. A creamy mixture made with a rotisserie chicken and simple pantry ingredients!

Ingredients

  • 2 Cups Cooked Chicken Breast Diced
  • 8 oz Cream Cheese Softened
  • 2 Cups Colby Jack Cheese Shredded
  • 15 oz Green Enchilada Sauce Mild
  • 2 TBSP Fresh Lime Juice
  • 1 Bunch Cilantro Finely Chopped
  • 4 Green Onions Finely Chopped
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 30 Fajita Size Flour Tortillas
  • Cooking Spray
  • Kosher Salt

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • In a large bowl combine softened cream cheese, enchilada sauce, shredded cheese, chopped cilantro, chopped green onions and lime juice.
  • Mix in cumin, chili powder, garlic powder and onion powder until well combined.
  • Fold in diced chicken.
  • Scoop 2 tablespoons of the filling onto the center of each flour tortilla.
  • Take one end of the tortilla and fold it over until it meets the opposite side.
  • Tightly pull back on the top fold to ensure the filling will be secure then roll up completely.
  • Place each taquito seam side down on the baking sheet while you are making the rest.
  • Preheat oven to 375 degrees.
  • Lightly spray with cooking spray and sprinkle with a little kosher salt.
  • Cook 15 taquitos at a time.
  • Bake for 15-20 minutes until lightly golden brown.

Notes

**If any of the filling melts out of the edges while cooking, simply use a butter knife to scoop it back in right after it comes out of the oven.
