Ingredients

Lemon Vinaigrette Ingredients

  • 2 TBSP Lemon Juice Freshly Squeezed
  • 2 TBSP Extra Virgin Olive Oil
  • 1 TSP Dijon Mustard
  • 1 TSP Honey
  • ΒΌ TSP Sea Salt
  • pinch Black Pepper Freshly Cracked

Salad Ingredients

  • 5 oz Arugula
  • 2 Grapefruit
  • 3 Naval Oranges
  • 3 Blood Oranges
  • 4 Mandarine Oranges
  • 1/2 Cup Chopped Pistachios
  • 1/2 Cup Micro Greens

Instructions

FOR DRESSING

  • Mix all ingredients in an airtight container and shake for 1 minute to emulsify.
  • Chill for 1 hour or up to 48 hours.
  • Shake again before drizzling over salad.

FOR SALAD

  • In a medium bowl, pour 1/4 of the dressing over the arugula and toss to coat.
  • Lay dressed arugula evenly over a large platter or plate.
  • Using a sharp knife, trim away all the peel and white pith from each of the citrus.
  • Slice each citrus into thin slices, getting at least 3-5 slices depending on the size of the citrus.
  • Lay citrus slices in an even layer over the arugula.
  • Sprinkle with chopped pistachios and micro greens.
  • Drizzle the entire salad with the remaining dressing.
  • Serve immediately.
