Lemon Vinaigrette Ingredients
2TBSPLemon JuiceFreshly Squeezed
2TBSPExtra Virgin Olive Oil
1TSPDijon Mustard
1TSPHoney
ΒΌTSPSea Salt

Salad Ingredients
5ozArugula
2Grapefruit
3Naval Oranges
3Blood Oranges
4Mandarine Oranges
1/2CupChopped Pistachios
1/2CupMicro Greens
Instructions
FOR DRESSING
Mix all ingredients in an airtight container and shake for 1 minute to emulsify.
Chill for 1 hour or up to 48 hours.
Shake again before drizzling over salad.
FOR SALAD
In a medium bowl, pour 1/4 of the dressing over the arugula and toss to coat.
Lay dressed arugula evenly over a large platter or plate.
Using a sharp knife, trim away all the peel and white pith from each of the citrus.
Slice each citrus into thin slices, getting at least 3-5 slices depending on the size of the citrus.
Lay citrus slices in an even layer over the arugula.
Sprinkle with chopped pistachios and micro greens.
Drizzle the entire salad with the remaining dressing.
