Then add on top of that trying to make dinner for yourself and your family!

That’s when easy meals like this come in handy. This is ready in 13 minutes!

Send this to the Trader Joe’s fans in your life.

Lunch is on the table in 12 minutes.

All you need for this “recipe” is:
Pork Gyoza Pot Stickers
Shredded Cabbage and Carrot Mix
Green Onions
Cilantro
Toasted Sesame Dressing
Crunchy Chili Oil (optional)

Cook potstickers according to directions and toss together with remaining ingredients.
Drizzle with oil.

You really can add as much or little as you like of everything.

comes to beating the summer heat, but desperately craving fall soups and autumnal comfort food?

It’s over 100 degrees in Texas, but that’s not stopping me from making and eating this Caramel Apple Cake poolside!

A little lunchbox prep.

Yes, I make a bunch of these every other month.

Yes, they freeze really well.

Yes, they thaw out by lunch time. This essentially is the freezer pack so don’t include one in their lunch that day.

Yes, that’s a lot of plastic baggies. I save the world in other ways and pick my battles where I see fit for me and my family.

Yes, you can use whatever meat you want. The fresh turkey breast from Costco is really good, too! It does have a lot of moisture, so just pat it a little dry with paper towels before you assemble the sandwiches. 

No, do not add condiments or veggies to this if you are going to freeze them. Add a separate little baggie for those items the morning of. Then they can add those themselves.

No, the bread does not dry out. Make these as fresh as possible and they are great. Be sure to squish any extra air out.

*If your child has an earlier lunch and it’s still a little chilled in the center, have them take the sandwich out right at the beginning of lunch and have them eat it last.

Kids are resilient. I have three boys (now teenagers) and they love these!! Well, to be transparent, they don’t love them as much towards the end of the year, but we try to mix things up as much as possible. 

And if you’ve made it this far be a good friend and send this to a fellow lunchbox maker!

Want to know my secret to dinner time?

It comes every single day.

Some nights it’s going to be hard to get dinner on the table without emotional breakdown by someone.

Other nights it’s a breeze. 

Then the in between nights you’ll get drive thru or take out!

Here are things that have made it easier for me over the years to not make it feel like a burden.

PREP - prepare some portion of dinner ahead. Whether that’s chopping all the veg when you get home from the store or throwing together a marinade before you leave for school drop off.

SHORTCUTS: Do yourself a favor and find ways to make things easier. Use a Costco rotisserie chicken for your recipes instead of cooking it yourself.

EXTRA: It doesn’t work for every recipe, but double up on a dinner when you can then freeze half of it. It only takes 5 more minutes to double a recipe. You’re already making a mess in the kitchen so save your future self some time.

Brown Sugar

Theres a very thin line when it comes to Halloween food.

It’s either cutsie or revolting.
