Oatmeal Cinnamon Chip Cookies

Servings: 14 Cookies

Ingredients

  • I Cup Cold Butter Cubed
  • 1 Cup Brown Sugar
  • 1 Cup Granulated Sugar
  • 2 Large Eggs
  • 2 tsp Pure Vanilla Extract
  • 2 1/2 Cups All Purpose Flour
  • 2 TBSP Cornstarch
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Kosher Salt
  • 1 1/2 Cups Quick Oats
  • 2 Cups Mini Cinnamon Chips Divided

Method

  1. Preheat oven to 400 degrees.
  2. In a large bowl cream together butter, brown sugar and granulated sugar for 2 minutes on medium speed.
  3. Add in eggs and vanilla and mix until well blended.
  4. In a separate bowl whisk together flour, cornstarch, baking powder, baking soda and salt.
  5. Stir in oatmeal.
  6. Slowly add the dry ingredients to the wet ingredients.
  7. Blend until the flour is halfway incorporated. You don’t want to over mix the dough.
  8. Add in 1 cup of Cinnamon Chips and finish mixing until the flour is just incorporated.
  9. Pour the remaining Cinnamon Chips into a bowl.
  10. Using a large cookie scoop* or 1/4 cup measuring cup, scoop dough and roll the rounded top into the remaining cinnamon chips. You may need to press them in with your hand, but you want the top to be completely covered.
  11. Chill in the refrigerator for 1-2 hours.
  12. Place 6 dough balls onto a baking sheet. Make sure to space them evenly apart.
  13. Bake for 10-13 minutes or until lightly golden brown.
  14. Let them cool for 5 minutes on the baking sheet then transfer to a cooling rack.
  15. Repeat with the remaining dough.
