Fabulous Food Friday #79

If you know me you know that I laaaaaaauuuuuuve a certain fast food restaurant that specializes in chicken...not cows...chicken. I was first introduced to it when my family moved to Utah. I was 17 at the time and totally into the mall. Yeah. Do you remember the mall? I mean really remember how malls used to be as a teenager? The mall is completely different now that I am an adult...not that the mall has changed, but I as a shopper have changed. Let's get in and out of that teen hangout place as fast as we can!!!
The mall had a small chicken restaurant there and my friends and I would frequently eat there while hanging out. {SIDENOTE} There was an 'older' lady that worked there and she was always so nice and quick...well...she still works there 13 years later! She was there when we last visited. {SIDENOTE over}.
Again, if you know me at all, you also know that I love to recreate dishes that I order all the time. Part of it is a game to see if I can really do it and the other part is because I know how expensive eating out can be! So, after a little research and a collaboration of recipes I came up with a very tasty nugget recipe that I am sure you and your family will love. I do not claim that these taste JUST LIKE the chicken (not cow) place, but comes pretty darn close!

Sweet Chicky Nuggets



2 skinless and boneless chicken breasts
1 cup milk
1 egg
1 1/4 cups flour
2 TBSP powdered sugar
2 tsp salt
1 tsp pepper
peanut oil (is best) or canola oil

In a medium bowl whisk the egg and stir in the milk. Trim any fat away from chicken. Cube chicken into bite size pieces. Place chicken in milk mixture,and cover. Let it 'marinate' for 2-4 hours in the fridge. This will make the chicken very nice and tender. In a gallon size resealable baggie combine flour, powdered sugar, salt and pepper. Seal and shake to combine. Place about 2 inches of oil in a medium deep pot. Over medium high heat (more towards the high side) heat oil until hot. If using a thermometer let the temperature reach 375°. If you don't have a fancy gadget like most people, I always test my oil by dropping a few drops of water into it. You want it to sizzle and not pop too much. Adjust your heat if necessary. Using a fork or tongs remove cut chicken from milk mixture and place in the flour mixture. Seal and shake until nuggets are completely coated. Place about a 6-8 nuggets into hot oil and let them cook until golden brown, turning half way through once the edge of your chicken starts to turn white. About 1 minute each side. Always double check to see if any chicken you make is cooked through. I always just make a tiny cut to see if it's pink. Remove and drain on a paper towel. Repeat until all nuggets are cooked. Serve with your favorite sauce! I will let you in on a secret that only my bestest friends know...I ALWAYS eat my nuggets with honey! Always.

Oh My - the "not cow" place is my favorite fast food. We moved from TX where CFA is everywhere to WA state where there are NO CFA's. I always make sure to eat there on our trips home to TX.

Another Pinterest hit here...I just wanted to shout out that if you really want these to taste like the real deal, you HAVE to use peanut oil. I worked at CFA in high school and I can tell you that that's why they're so good. :)

They did not get brown, and did not even seem breaded/coated.

@Cabbage Patch Kid, you might find it as Confectioner's sugar or Icing sugar.
And I always eat my nuggets with honey, too. Thought I was one of very few. My friends always said it's because I'm Canadian.

They used to soak the strips in pickle juice but they changed it several years ago to buttermilk. Remember when they re-released the strips...and introduced that yummy sauce?? I asked what they changed and this is what they told me. I've been making something similar to this recipe for years...just as soon as I found out about the sugar! Yep...it's ALL ABOUT THE SUGAR!! I haven't tried powdered, though. And I'm diabetic so sometimes I use Splenda or Stevia (not as good, though) Yummo!

I'm from the original home of that 'eet mor chikin' place and I will concur that pickle juice is the way to go. I've never been able to recreate them exactly, but I'll try the confex sugar in my next batch. I always add a little paprika and garlic powder (just a touch mind you) to my breading, too. Thanks! We tried these baked and they didn't work. We ended up pan frying the rest. I think you'd probably need to dip them in butter before coating with the flour mixture, but that's just a guess.

You can test oil by putting the end of a wooden spoon into the oil. When little bubbles form around the handle, it is hot enough to fry.

My husband owns a Chick-fil-A franchise here in TN and I can assure you that pickle juice is a thing of the past for the strips and powdered sugar...while it's a good guess is not right either. I am going to try these out though and see how it turns out. Hmmm...

If you guys really want it to taste like chicK-fil-a, you have to brine your chicken in pickle juice! Salt and pepper for an hour before you fry. that's the secret to their chicken.

If you soak in pickle juice, your chicken will taste like a pickle. The only time I ever taste pickle on their chicken is if you bite into an actual pickle. I tried marinating in pickle juice before and I will not ever again.

I personally marinate in low sodium chicken broth. It puts more flavor through the chicken and gets you a lot closer than pickle juice.

Also, we are peanut oil lovers but it has jacked up in price with it's popularity. However, here at least, Walmart carries light and dark sunflower oil for less mulah. High flash point, super healthy! God Bless!

OMG! I am like the biggest CFA fan in the entire world. Seriously. I eat there every time I head into town (except on Sundays). They know me by name, they ask about my children, etc. LOL! If I go out of town, I make sure to stay near a CFA so I can eat there too. ROTFL! LOVE IT. Can't wait to try this at home. Now, we need the fry recipe please ;-)

I added a pinch of sugar to the mixture in the bag before coating the chicken nuggets. I also found that cooking them to golden is too much, I cooked them and took them out when they were a little lighter than golden and they tasted like the real thing! They were delicious!

For diabetics replace the sugar with xylitol. It tastes just like sugar but will not spike your sugar. I also use it to make sweet tea.

So yummy! Thanks for sharing your secrets with us! I made them for lunch today - but didn't realize that I should have started the recipe before church so I skipped the marinating part. BUT we liked them so much that I cut up more chicken and put it in the marinade and put in the freezer so it will be ready next time. Thanks again!

Regarding some of the comments: My husband owns a Chick-Fil-A... I can tell you the nuggets are not soaked in pickle juice (?!)... not sure why that urban legend is going around. :) I can confirm that they are cooked in peanut oil. Part of their secret is the seasonings as well. We can't show up anywhere without a tray of nuggets, or our friends will be disappointed! :)

I made this tonight and here are my critiques; I soaked my chicken for a few hours in pickle juice like the comments said. I would not add the salt as directed it was way too salty with the pickle juice brine.
-My husband said it tastes just like a chick-fil-a! He said now I just need to make waffle fries! ;)

I heard that there chicken is steamed, thats what keeps it "not as bad" for you. Not 100% thought, never worked there or cofirmed it!!

I made this tonight for my family and since two of us have Celiac Disease I simply used gluten free flour in place of regular flour and we LOVE it! Thanks sooo much! Especially since breaded chicken nuggets are out of the question from the restaurant!

Cannot wait to try these. Nuggets are marinating in the fridge are we speak. Peanut oil was way too expensive as it was only available in a huge container, so canola it is. My kids are so excited! I'll post the results soon.

i will bear testimony that honey is the only condiment that chicken should be eaten with.
so happy you have shared this, as our local chicken restaurant (not cow) stopped family night (when kids eat free..). i don't have a problem with their delicious chicken, i have a problem without it.

So simple, and yet, I want this for breakfast! Love that chicken -not cow- place, and unfortunately, the closest one to us is in a *mall*, an hour away. I grew up in Texas, though, where when you throw a rock you hit either a Sonic or a chicken -not cow- place. It's hard living in NJ where there are hardly any. Now I can make these at home and even on a Sunday!

Didn't like this recipe at all. There wasn't enough seasoning, so they kinda tasted plain. I could taste the sugar the most. The only thing that made these taste better was a condiment. I used sweet 7 sour sauce. Maybe the seasoning should be doubled, except the sugar. Next time: more spices, add panko.

I'm sure you could, but you will not get the same results. Try putting a little oil or butter in your baking pan or else your nuggets will still be a little flour-y when you take them out.

I just made these for lunch... OMG they are AMAZING!! They taste just like the "not cow" place :)

I used 3 chicken breasts, because that's how many were in the package.. I have whole quart size bag of them left, after feeding 2 kids and 2 adults!

I agree that CFA has the best nuggets ever. I do not care for most nuggets with all that excessive yellow crunchy stuff on them. I think I'll leave out the sugar and add some paprika. I lived near a CFA for a short while and grew quite fond of their nuggets and their honey mustard sauce.
