My Name Is Snickerdoodle: Classic Apple Crisp

Classic Apple Crisp

I hope you didn't miss my Classic Apple Crisp over at Landeelu!
Just in case you did, here it is!

As we head in to cooler weather...well...if you live in Texas we are headed into cool-ish weather, I start craving all those comfort foods.  Warm soups, casseroles, turkey with all the starchy sides swimming in gravy, and hot-out-of-the-oven desserts!

One of those desserts is any sort of fruit crisp or cobbler.  I love the idea of a hot dessert with a cold scoop (or two) of ice cream melting away on it.  My husband, on the other hand, is not a fan.  He's a good sport and will try a bite of a new recipe I found on Pinterest and he's never convinced.  I became a crisp fanatic trying new recipes I found and I just wasn't satisfied with the outcome either.
Then one day I made another crisp as my last resort to finally change my husband's opinion and to hopefully give myself a little hope that the perfect crisp did in fact exist.  I didn't say a word as he picked up the spoon and took a bite.  Then another and another.  His eyes turned to me and with his mouth full of warm apple crisp proclaimed, "THIS IS IT!"  I was thrilled!  Once he swallowed and then continued to go for another bite, he asked where I found the recipe.  I simply stated, "I finally just created my own."

This dessert truly comes together in no time and I would bet you already have most or all these ingredients in your pantry.  I love how you can see the apples peeking through and you are going to have a hard time resisting dipping a spoon into the bubbly syrup this makes!

What I love most about comforting foods is that they are never complicated and made with the most simple of ingredients.

Makes 6 Servings

Apple Filling
4-5 medium Granny Smith or Honeycrisp apples
2/3 cups brown sugar
1 TBSP cinnamon
1 TBSP cornstarch
4 TBSP cold butter

Crisp Topping
6 TBSP butter, melted
1/2 cup brown sugar
2 TBSP granulated sugar
1 tsp cinnamon
3/4 cup all purpose flour

1.  Preheat your oven to 375.
2.  Peel, core, slice and cube your apples into bite size pieces and place in a large bowl. Sprinkle over with brown sugar, cinnamon, and corn starch and toss to coat.
3.  In a 10 inch baking dish dot the bottom with the the 4 TBSP of butter.  Pour apples over butter.
4.  In the same large bowl (because who likes more dishes to wash?) stir together melted butter, brown sugar, granulated sugar, cinnamon and flour until well combined.  It should look/feel like damp sand and hold together if you press it with your fingers.
5.  Sprinkle the topping over the apples, completely covering.
6.  Bake for 30 minutes or until golden brown and bubbly around the edges.
7.  Serve warm with ice cream or whipped cream.
