Triple Chocolate Cream Pie

I have got Thanksgiving menu overload on the brain lately.  Maybe it’s because recipes are flooding the social media atmosphere due to the fact that Thanksgiving is, in deed, coming in 9 days!  When did that happen?

This Triple Chocolate Cream Pie is to die for!  As in, you won’t even be able to resist eating it for breakfast kinda of way.  I may speak from experience.

You can use a pre-made graham cracker crust but, I highly encourage you
to make your own (I’ve got a recipe for that too!).  Since this is a no
bake pie (other than the crust) You can make this up to the night before
your feast and just let it set up in the fridge over night.  Or, if you
are super prepared, it can be made up to a 5 days ahead.  Just add the
whipping cream the day you plan on serving it and make sure it’s wrapped
up well in the fridge.

Triple Chocolate Cream Pie

Serves 8

Graham Cracker Crust
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
2 TBSP brown sugar
6 TBSP butter, melted

Preheat oven to 375 degrees.  In a food processor or medium bowl, combine all ingredients until well combined.  Pour into a 9″ pie pan and press evenly on the bottom and up the sides.  Bake for 10-12 minutes.  Let it cool completely.

Whipped Cream
2 cups whipping cream
1/2 cup granulated sugar 
1 tsp vanilla extract
Using a stand mixer or a hand held mixer, whip ingredients on high speed until stiff peaks form, about 4-5 minutes.

White Chocolate Layer
1/2 cup white chocolate chips, melted
8 oz cream cheese, softened
1 1/2 cups powdered sugar
1 cup prepared whipped cream

Mix together melted white chocolate chips, cream cheese and powdered sugar until smooth.  Fold in whipped cream.  Spread evenly over cooled crust.  Chill while preparing chocolate layer.

Chocolate Layer
1 lg box chocolate pudding mix
1 cup milk
1 12 oz can evaporated milk

Whip together ingredients for 2 minutes.  Pour over white chocolate layer and spread evenly.  Chill for 4 hours before serving.

Top with remaining whipped cream and sprinkle with mini chocolate chips.
