Ingredients
Lemon Vinaigrette Ingredients
- 2 TBSP Lemon Juice Freshly Squeezed
- 2 TBSP Extra Virgin Olive Oil
- 1 TSP Dijon Mustard
- 1 TSP Honey
- ΒΌ TSP Sea Salt
- pinch Black Pepper Freshly Cracked
Salad Ingredients
- 5 oz Arugula
- 2 Grapefruit
- 3 Naval Oranges
- 3 Blood Oranges
- 4 Mandarine Oranges
- 1/2 Cup Chopped Pistachios
- 1/2 Cup Micro Greens
Instructions
FOR DRESSING
- Mix all ingredients in an airtight container and shake for 1 minute to emulsify.
- Chill for 1 hour or up to 48 hours.
- Shake again before drizzling over salad.
FOR SALAD
- In a medium bowl, pour 1/4 of the dressing over the arugula and toss to coat.
- Lay dressed arugula evenly over a large platter or plate.
- Using a sharp knife, trim away all the peel and white pith from each of the citrus.
- Slice each citrus into thin slices, getting at least 3-5 slices depending on the size of the citrus.
- Lay citrus slices in an even layer over the arugula.
- Sprinkle with chopped pistachios and micro greens.
- Drizzle the entire salad with the remaining dressing.
- Serve immediately.
