Fabulous Food Friday #139 {Pumpkin Chocolate Chip Cookies}

I know there are plenty of super easy pumpkin cookie recipes out there.  Most of those have something like 3 ingredients or less.  I’ve made some of those in the past and have enjoyed eating said cookies.  This recipe has more than 3 ingredients, but I promise you that you will never go back to those other cookies once you make these.  They are almost as easy as the easiest version but severely more tasty!  (Like how I was way dramatic there?) 

Pumpkin Chocolate Chip Cookies

Makes About 30 Cookies

1/2 cup butter, softened
1 cup sugar
3/4 cup brown sugar
2 eggs
1 3/4 cup (15. oz can) pumpkin puree
1 tsp vanilla
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp nutmeg
1 1/2 tsp cinnamon
2 3/4 cups all purpose flour
2 cups chocolate chips (milk or semi-sweet)

Preheat oven to 375.  In a large stand mixer or bowl, cream together butter, sugar and brown sugar.  Beat in egg one at a time.  Mix in pumpkin puree and vanilla.  In a medium bowl whisk together baking soda, baking powder, salt, nutmeg, cinnamon and flour.  Slowly add in to dough.  Mix just until incorporated.  Stir in chocolate chips. Using a medium cookie scoop (2 TBSP), scoop onto cookie sheet and bake for 10-12 minutes.  Cookies should be slightly brown on the bottom and very soft.
