Strawberry Buttercream Frosting

That’s right.
I said strawberry, buttercream, and frosting in the same sentence!

I was a busy little bee yesterday creating a recipe that I’ve had in my mind for some time now.  And this frosting is only the half of it!  I wanted to split it up between today and tomorrow to build the excitement of it all (okay, that was a little dramatic)!  Basically, I didn’t want tomorrow’s recipe post to be too overwhelming with two to-die-for recipes.  You might go into sugar shock.  It’s the perfect Valentine’s Day treat your whole family will love!

Soooo, this frosting recipe can definitely be used as a dip.  I only share that knowledge with you because when taste testing it, I not only used a spoon (multiple times) but,  graham crackers,  marshmallows and even  a Hershey’s Kiss.  Don’t judge.  When you make it, you’ll be searching your pantry for dippable items, because a spoon gets boring after a while! 

Strawberry Buttercream Frosting

1/2 cup butter, softened
1 1/2 tsp real vanilla extract
4-5 cups powdered sugar*
1/2 cup fresh strawberry puree*

In a large bowl, beat together butter and vanilla.  Slowly add in powdered sugar 1 cup at a time until well well blended.   *I only made mine with 4 cups powdered sugar and it was pretty soft.  Add another cup if you need it to be more stiff.

Add in strawberry puree and mix until combined.  Store in an airtight container in the refrigerator until ready to use.  Anything you frost with this will need to be stored in the refrigerator because of the fresh strawberry puree.

*How to make fresh strawberry puree
Wash and hull about 8 medium strawberries.  Place in a food processor or blender and pulse until pureed.
