Sugar Cookie Sprinkle Bars

I love to make cookies!  I know. Surprise, surprise.  Lately, I’ve tried to be a little more patient and fun and have the kids help me make them.  I guess you could say I have control issues when it comes to the kitchen.  Should I even admit that?  Oh well.  I just do.

My oldest son especially loves to help me.  It’s because he’s old enough to know that when you are in the kitchen helping, you get to lick the spoon or beaters!  I’ve taught him well.  However, because he is a kid, his attention span usually doesn’t last through all of the baking process.  Especially when it comes to sugar cookies.  Expecting him to stay there and roll and cut out every last cookie is ridiculous.  And then there is the mess of it all.  That’s just one of the things I love about these Sugar Cookie Sprinkle Bars.  They bake in a pan.  All. At. Once.  And taste just as fabulous as your roll and cut out sugar cookies.

Maybe it’s the sprinkles.  If I could use colorful sprinkles on all of my food, I would.  There is just something about them that brings happiness to my little foodie heart!  Especially when they are sprinkled over any type of pink frosting!

Don’t get me wrong.  There are times when I don’t mind the mess and it’s always fun to get my kids involved with cutting out fun shapes.  Then there are times where I want sugar cookies instantaneously!

Well, these Sugar Cookie Sprinkle Bars won’t be made up in an instant, but they sure won’t be making a mess on your counter and will be just as fantastic to eat AND wow your family and friends with!

Sugar Cookie Sprinkle Bars

Makes about 30 bars

Ingredients
For Sugar Cookie Bars :
1 cup butter, softened
3/4 cup vegetable oil
1 cup granulated sugar
1 cup powdered sugar
2 TBSP milk
2 large eggs
1/2 tsp baking powder
1/2 tsp cream of tartar
1/2 tsp salt
4 cups all purpose flour

For Frosting:
5 TBSP butter, softened
1/2 cup sour cream
1 tsp pure vanilla extract
4 cups powdered sugar
4/5 TBSP milk
2-3 drops red food coloring
1/2 cup colorful sprinkles

Directions
For Bars:
1.  Preheat oven to 350 degrees.
2.  In a standing mixer or large bowl, cream together butter, oil, granulated sugar and powdered sugar for 2 minutes on medium speed.
3.  Add in milk and eggs and mix until well combined.
4.  In a separate medium bowl whisk together baking powder, cream of tartar salt and flour.
5.  Slowly add in a little flour mixture while beating and mix until just combined.  Do not over beat.
6.  Lightly spray a standard baking sheet with oil.
7.  Pour batter into the baking sheet and evenly spread out.
8.  Bake for 12-15 minutes and an inserted toothpick comes out clean.
9.  Cool 20 minutes before frosting.

For Frosting:
1.  In a standing mixer or large bowl cream together butter and sour cream until smooth.
2.  Add in vanilla extract.
3.  Slowly add in the powdered sugar until completely incorporated.
4.  Pour in 1 TBSP at a time of milk until consistency is about the same as cake batter.  Not too runny, but pourable.
5.  Add in food coloring and mix.
6.  Evenly spread frosting over dough and immediately sprinkle with sprinkles.
7.  Best served chilled until ready to serve.
