Buttermilk Pancakes {Fabulous Food Friday #146}

It's been over 6 months since I last posted a FFF (Fabulous Food Friday) recipe.  That's weird!  I'm getting back on track and actually have a couple future FFF recipes all lined up for you.

Back in 2000 I was obsessed with the website, Top Secret Recipes.  I had printed off dozens of recipes and this is the only one I ever made.  It's the only pancake recipe I've made ever since.  My family loves them!  I've gotten smart and quadruple the batch (see below), cook them all, then freeze them.  In the mornings it take a minute in the microwave and they are just as perfect as when they were first cooked!  Is your family a pancake family, too?  

Buttermilk Pancakes

{Single recipe}
Makes 8-10 Pancakes
1 1/4 cups all purpose flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 egg
1 1/4 cup buttermilk or milk
1/4 cup oil

{Pancakes for a crowd or to freeze}
Makes 44 pancakes
5 cups all purpose flour
1 cup sugar
3 TBSP baking soda
4 tsp baking powder
1 tsp salt
4 eggs
5-5 1/2 cups buttermilk or milk
1 cup oil

Preheat a griddle or flat pan to 335 degrees or medium heat.  In a large bowl whisk together flour, sugar, baking powder, baking soda and salt.  In a medium bowl whisk together egg, milk and oil.  Pour wet ingredients into dry ingredients and whisk together until just combined.  Do not over mix.  There will be a few lumps.  Pour 1/4 cup batter onto hot ungreased griddle or pan.  Cook until bubbles form on top.  About 1-2 minutes.  Flip and cook for an additional 1-2 minutes or until cooked through.
