Corn Bread in a skillet

This is of those recipes you’ll want to print off and keep in your recipe binder. It’s such an easy recipe and only takes a few ingredients to make it happen.

A slice of corn bread slathered with butter.

I didn’t grow up on corn bread. The first time I remember having it I was in my late teens and it was dreadful. Super crumbly and had a weird bitter aftertaste.

It was then that I knew I just didn’t like corn bread. No matter how much butter you put on it.

Later I got married, moved to Texas and ate at a few genuine BBQ joints. It was then that I learned corn bread didn’t have to be dry and weak in flavor.

Buttering a skillet

Over the years I’ve tried a few recipes, but honed this one I’m sharing with you below. It’s very tender in the center and has an incredible golden crust.

How To Make Cornbread

  • Preheat oven to 400 degrees.
  • Using a softened stick of butter, generously butter a 9 inch ceramic cast iron skillet.
  • In a small mixing bowl whisk together oil, egg, milk and sugar together. Set aside.
  • In a medium mixing bowl whisk together flour, cornmeal, salt and baking powder.

  • Slowly mix in wet ingredients into the dry ingredients.
  • Stir until just combined. Do not over mix.
  • Pour into the skillet and spread out evenly.
  • Bake for 20-25 minutes. The top and edges should be lightly golden brown and the center should come out clean when a toothpick is inserted.
  • Cool slightly and serve.
The easiest corn bread recipe

Corn bread is super versatile and can be topped with so many things. We like to slather ours in butter and drizzle it with honey. You could even top it with Raspberry Butter to bring out the sweetness.

If you want to go down the spice route you could still add a layer of butter on your slice then top with a pepper jelly or even a few slices of a hot jalapeno.

No matter how you serve it, it’s definitely best served fresh from the oven!
