This Roasted Tomato and Burrata Dip is one of those appetizers that looks impressive, but is actually incredibly easy to make! Sweet cherry tomatoes are roasted with fresh garlic, herbs and olive oil until they burst and become deliciously jammy. Creamy burrata is added while everything is still hot, then finished with fresh basil and Parmesan cheese. Serve it warm with toasted baguette slices or focaccia for scooping up every last bit!

I’m a huge fan of appetizers that feel a little fancy without actually requiring a lot of work. This is definitely one of them. You can set the entire baking dish on the table, surround it with toasted bread and let everyone dig in.



Why You’ll Love This Burrata Dip
Roasting cherry tomatoes at a high temperature brings out their natural sweetness and creates the most flavorful juices in the bottom of the pan. Add fresh garlic, parsley and plenty of good olive oil and it practically creates its own sauce.
The best part is the burrata! If you’ve never had it before, burrata is similar to fresh mozzarella, but the inside is incredibly soft and creamy. I like to split the burrata balls open right over the hot roasted tomatoes so that creamy center starts melting into all of those flavorful tomato juices.
Freshly grated Parmesan adds a little saltiness while fresh basil brightens everything up. You can also sprinkle red pepper flakes over the top if you like a little heat.

Tips For The Best Roasted Tomatoes and Burrata
Use cherry or grape tomatoes that are similar in size so they roast evenly. You’ll know they’re ready when the tomatoes have softened, the skins are slightly blistered and several have burst open.
Add the burrata as soon as the tomatoes come out of the oven. The residual heat warms the cheese without completely melting it.
I love serving this roasted tomato burrata appetizer with toasted baguette slices, but warm focaccia would be incredible too. Make sure you have plenty of bread because everyone is going to want to soak up that garlicky tomato and olive oil mixture at the bottom of the dish!

Roasted Tomato and Burrata Dip
Ingredients
- 20 oz Cherry Tomatoes
- 3/4 Cup Extra Virgin Olive Oil
- 5-6 Whole Garlic Cloves Minced
- 2 TBSP Fresh Parsley Finely Chopped
- 1 tsp AM Salt or Kosher Salt
- Freshly Cracked Pepper
- 2 TBSP Fresh Basil Finely Chopped
- 1/2 Cup Parmesan Cheese Freshly Grated
- 3-4 Burrata Balls
- Red Pepper Flakes Optional
Instructions
- Preheat oven to 425 degrees.
- Place washed cherry tomatoes in a 9×13 baking dish.
- Stir in olive oil, parsley, garlic, salt and pepper.
- Bake uncovered for 20-25 minutes until tomatoes are roasted on the tops and some have burst.
- Remove from oven and immediately place in burrata balls, splitting them open.
- Sprinkle with parmesan cheese and basil.
- Serve hot with toasted baguette slices or focaccia.
